It can be served with dishes such as green beans, leeks with olive oil, okra, artichokes, beans. You can drink lentil soup before meat dishes to prepare and relax your stomach. Lentil soup will be a great choice as a snack for main dishes such as lamb with vegetables, lula kebab, mantis or baked vegetables! Lentil soup goes well with legumes that do not use meat. For example, you can drink it before recipes such as fellah balls and stuffed balls. You can also enjoy it with fried dishes such as shakshuka and mukver.

Lentil soup is common in the Middle East between Europe and Pakistan. This dish is very familiar to people in Turkey, Egypt, Lebanon, and Saudi Arabia. But not everywhere it is prepared the same way. In the Emirates, this soup may be made with celery, carrots, yellow lentils and corn oil. Of the spices will be only white ground pepper, ground star and salt. In Syria, to lentil soup will be added turmeric and tomatoes with garlic, but not always peppers.


Arabic lentil soup

Ingredients

1 cup red lentils (if possible from local cultivation)

3 teaspoons of rice (spelled).

1 bulb

3/4 liter of water

1 bay leaf

1 tbsp. oil

1 teaspoon cumin

2 cm of fresh ginger

1 teaspoon curry

2 tablespoons tomato paste

1 pinch of chili

Salt as needed

Juice of one organic lemon


Preparation

Soak lentils and rice in twice the amount of salted water for about 15 minutes.


Peel and finely chop the onion. Peel a squash, grate it and squeeze the juice. Heat oil in a frying pan, fry onions and spices (bay leaf, ginger, cumin, curry). Add tomato paste and fry briefly.


Add the strained lentils, rice and bay leaf. Fill with water, cover and cook for 15 minutes. Stand on the stove for about 10 minutes and allow infusing. Make sure there is enough water in the pan!


Make a purée. Season to taste with salt, chili and a few drops of lemon juice.


Tip: the dish is ideal for cooking: boiled lentils can be eaten once as a spread, and the next day as a soup!




How long does it take to cook lentil soup?

Lentil soup is considered one of the most practical soups, but if ingredients such as lentils, potatoes and carrots have a long cooking time, the cooking time may be longer. Depending on the number of ingredients, lentil soup is ready in 40 minutes - 1 hour. You can use a pressure cooker to halve this time. Your soup is ready in the pressure cooker in no more than 30 minutes!
